Indeks glikemik (Glycemic Index) adalah pengukuran seberapa cepat karbohidrat atau gula dari suatu jenis makanan dapat meningkatkan kadar gula darah. Sebagai patokannya, digunakan gula murni sebagai standar dengan nilai indeks glikemik 100. Semakin tinggi indeks glikemik makanan maka semakin mudah pula makanan tersebut meningkatkan kadar gula darah.
Berdasarkan karakteristik nilai indeks glikemiknya, makanan dikelompokkan menjadi:
Kandungan glikemik (Glycemic Load) menilai seberapa banyak glukosa yang terkandung dari makanan tersebut. Semakin rendah Glycemic Load, semakin kecil pula tingkat suatu makanan yang disajikan memicu peningkatan gula darah secara berlebih. Nilai Glycemic Load bisa berbeda-beda tergantung dari kadar karbohidrat yang terkandung dalam makanan.
Pengelompokkan Glycemic Load adalah sebagai berikut:
Glycemic Load dapat dihitung dengan cara mengalikan nilai Glycemic Index dengan jumlah karbohidrat yang terkandung dari suatu makanan lalu dibagi 100. Misalnya konsumsi 47 gram wortel mengandung 7,5 gram karbohidrat (nilai GI wortel adalah 47), jadi nilai Glycemic Load wortel adalah = (47 x 7,5) : 100 = 3,53.
